Vegan Birria Tacos (quesabirria)

These had been trending on TikTok while I was in the thick of baby phase and trying to navigate being the default parent while Eddie was back at work, but now I finally have made this vegan!

Birria tacos are traditionally made with goat or beef and are a celebratory dish in Mexican culture, originating from Jalisco! These vegan quesabirria tacos are a labour of love, but one batch makes a LOT of tacos so it makes sense that it can feed a crowd!

SOY CURLS: from Coven (Hamilton or Kitchener)
Most ingredients are from America Latina Grocery in Kitchener and my local Asian Market (Waterloo Central Supermarket and T&T)

Lovely and tasty homage! I’m Mexican and grew up using these chilies for base sauces of many dishes.

This sauce in particular is very versatile. I use mine for enchiladas and pozole. You can also pour it over fried or baked potatoes 😋

Working my way back to vegetarian & plant based so this looks so yummy! Very similar to how I make chili. For extra bit of smokiness toast the dried chilis in a pan before cooking them in the water. I think I’ll try this out with jackfruit cuz I don’t have soy curls at the moment! Thanks for sharing :)

I find my favorite cheese alternative for Birria is Mykonos liquid mozzarella! It’s absolute perfection!

Is ALL Mexican food such a labour of love? Because, every time I make Mexican food, I am hours in the kitchen. But, obviously, in your house it’s worth it, ‘cause you get smoulders at the end.😂.
