I went to my first job interview of 2025. After my internship at Robert Mondavi, I moved to LA and I'm excited to be back in the kitchen. Wish me luck :)

Honestly the bathrooms being clean is such a clear clue, no joke. I work with students in lab under a hospitality/culinary program and it’s so much fun helping people talk through what fun things they have goals for with their degrees and what would be the most helpful for them towards that end. Family meal is always a good sign as well (as long as it’s not cruddy scraps or no time is actually allotted to eat), showing that the business is willing to value you as a person that needs sustenance, not just an employee. Besides these factors, I would look into the details of any job that has tip pooling because often that is the next source of larger problems a fine dining setting may have FOH-wise. For BOH, meet the head chefs to see if they have a temper or can answer questions during stressful situations.

I am curious about something. For these interviews, is it compulsory that you bring your own kitchen tools? Knives, scissors, etc? Or did I just misinterpret the video?

Fun fact: stage is French. Its basically an internship and most training programs and even university programs have it. The nulber of times ive been told by docotrs, speech therapists, and other peofessions thzt they'll have someone with them en stage is so freaking common. My babysitter who is in school for child development is on stage the whole month of april in another region.

The noodles look like the ones from Shin ramen light :DD I love those, I find the texture to be a bit better than regular fried Shin noodles

In the US, restaurants are legally required to page you for a “stage”. Now this might not be the practice else wear but generally in the US it is illegal to not pay at least minimum wage for a “stage”.
