Knuckle method doesnt not always work when cooking rice, it really depends on the rice variety and how old the rice is (the amount of water content). Trial and error method is the only way to go. Go ask Uncle Roger

I have an excellent wok done right it tastes better homemade I use higher quality meats no msg needed. I have a GI disease and msg and I are not compatible. With some good quality soy and oyster sauce making fried rice and Lo mein is quick and easy made with leftovers like pork tenderloin or grilled chicken. Our last take out order was $70 for 4 ppl to exspensive! A frozen veggie blend gives me the water chestnuts I adore.

MSG stands for makes stuff great so I use it in everything stir fry otherwise it tastes bland.... I never go to Chinese restaurants that have the big no MSG signs 🤮 might as well put a sign that says "bland dishes inside " 😆

Glutenous Rice or sweet rice is used for dessert, not the same as normal sticky rice used for stape food. In terms of biology it's Oryza sativ var. glutinosa vs the normal Oryza sativa japonica used in east asia. While in the west, Oryza sativa indica normally used. btw, indica rice is also used in widely China, but I rarely see it in American Chinese food.

For real Chinese food, we don’t use MSG. The food tastes better in restaurants because it’s the Wok kee 锅气

I bought Beef Broccoli @ a big box store. Cooking it, it looks awful. But, it tastes the same as Beef Broccoli @ an Asian restaurant.
