The excitment I felt after having one of these tortillas was pretty funny. They're awesome!! I haven't been able to create a keto approved tortilla that I love as much as this one, until NOW. I hope you guys try it.

Dough recipe credit:
Headbanger's Kitchen (not sure if this is the actual creator of the recipe... after all it is so simple, it has probably been used throughout the web but I hadn't seen it until recently)

Macros per serving (18 Tortillas)
Calories: 17
Fat: 0.4g
Net Carbs: 0.8g
Total Carbs: 2.7g
Fiber: 1.9g
Protein: 0.4g

Recipe makes 18 servings but it all depends on the size you make your tortillas and how thin you roll them out.

Ingredients
- 1/2 Cup Coconut Flour
- 2 Tbsp Psyillium Husk
- 1/2 Tsp Baking Powder
- 1 Cup very warm water
-oil, butter, or spray for pan frying (the oil is not included in the macros for this recipe)

Directions
Heat the water for 30-45 seconds in the microwave
Mix all the dry ingredients
Add the water, a little more or less depending on your atmosphere
Form a dough and cut into 8
Roll out the dough VERY thinly between 2 sheets of parchment paper
Use a pot lid or something else you have on hand to cut out tortillas
continue to use the scraps of the dough until all dough is used up
Fry on both sides until golden brown
Package in an air tight container or "ziplock" bag.
*optional, before serving char slightly over an open flame.

OMG, I just made these as pizza crusts and they were delicious! Thank you for sharing this recipe. I am diabetic and these crusts/tortillas didn't spike my blood sugar but a mere 8 points. Any whole wheat tortilla/dough would have spiked it up at least 40 points for just one crust. I ate 4!

Instead of making them super thin, I divided the recipe into 8 pizza crusts. I added a tablespoon of parmesan cheese and a tablespoon of italian spices. Then I baked the crusts at 400 degrees for 6 minutes. Turned them at 3 minutes to make the crusts crispie. Added the sauce, cheese, and topings and cooked it for another 5 minutes to melt the cheese. Voila, 4 low carb mini thin crust pizzas! Did I forget to mention how crispy these are?🤣

1 cup of almond flour and less than half a cup of warm water to sub almond flour for coconut flour. They taste great! If it's still too sticky, add almond flour a bit at a time. I don't use a lid

Thanks so much for this recipe. I followed it exactly--- my peeps and I were very happy with the results. I used garlic and chile powder to tone down the coconut flavor. I'm so glad it didn't use any eggs. As far as technique goes, I started out with a tortilla press which gave me the perfect round shape so I didn't need the pot lid. Then I rolled them thinner. I agree these have to be thin or else they are a little gooey in the middle. I still only ended up with a dozen, but definitely worth making. This recipe is a keeper!

Thank you for showing a close up on how thin you roll them out. My first attempt making tortillas (different recipe) I thought I was rolling them out thin enough but after cooking they came out too thick. I'm going to try this recipe using your method to get them really thin. I'm not on keto, but 2 weeks ago for medical reasons my doc told me to greatly reduce my carbs. I never thought I'd miss tortillas. Funny how that works. Now that I can't have them, I miss them. So thank you for helping me keep my sanity.

I just made this recipe. For some reason they turned purplish blue. The flavor is good, but the texture is a little gritty. When I did the taste test I just ate half of one by itself. It was hard to swallow and it is very dry by itself. I had to get a drink to help 1 bite go down. Then my throat felt scratchy. I am going to try it as a taco for dinner to see if it goes down easier with meat and cheese. I was also thinking of next time I make this I am going to use chicken broth instead of water.

I would say the grind of the flour and psyllium husk makes a difference. The items used in the video are very finely ground.. The psyllium husk I have is quite coarse, so the coarser your flour, the more you'll need. If you have a coffee or spice grinder, put your ingredients through it, to achieve the same consistency as the items used in the video... 2 tbsps of the husk powder in the video, may well equal 2-and-a-half, maybe three tbsps of coarser psyllium husk...

Tried this to a T except with almond flour and it was a big sticky mess and wouldn't form into tortillas. Must be important to stick with the coconut flour
