Perfect meal for a chilly windy day in isolation.

INGREDIENTS:
1.2kg ripe tomatoes, peeled, quartered (could use 3 x 400g tinned diced tomatoes)
1 red onion chopped
2 tablespoons olive oil
6 sprigs of fresh thyme
3 cloves garlic crushed
3 teaspoons brown sugar
1 litre vegetable stock
1/3 cup basil pesto
Crusty bread, parmesan cheese grated and basil leaves to serve

Cooking: An activity to entertain oneself whilst in isolation.
