Serves - 2 To 4

Ingredients -

Chicken Marinade -

2 or 4 - Large Boneless & Skinless Chicken Thighs
1 Cup (250ml) - Buttermilk
1 Tbsp (20ml) - Sriracha Sauce (Optional)
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder

Seasoned Flour Mix -

1 1/2 Cups (225g) - Plain (All Purpose) Flour
3 Tbsp (35g) - Corn Flour or Starch
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Celery Salt

Plain Mayonnaise -

200ml (200g) - Olive Oil (NOT Extra Virgin Olive Oil)
1 - Large Whole Egg
1 1/2 tsp (15ml) - White Vinegar or Lemon Juice
1 tsp (10g) - Dijon Mustard

Tangy Southern Ingredients -

1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Garlic Powder
1 Tbsp (20g) - Tomato Ketchup
1 Tbsp (20g) - Horseradish
1 Tbsp (20ml) - Worcestershire Sauce
Sea Salt Flakes To Taste

Additional Ingredients -

Burger Buns (I Used Brioche)
Tomato, Thinly Sliced
Lettuce (I Used Baby Cos), Washed
Seasoning To Taste

Notes -

Can I Use Chicken Breast?

You can definitely use chicken breast instead of thighs. The chicken breast will need to be butterflied and sliced into two even-sized fillets. As for cooking times, fry the breast for 3 minutes on each side at the same temperature of 170.c-340.f.

Mayonnaise By Hand -

To make the mayonnaise by hand, secure a bowl with a damp tea towel wrapped around the bottom. Add in all of the ingredients except the oil and whisk together until smooth. Whilst continuously and vigorously whisking, very slowly pour in the oil to create the emulsion. If it starts to pool on top, stop immediately and whisk it in before adding more. This can also be made in a blender or food processor.

How Long Will The Mayo Last?

The mayonnaise will last up to 2 days in the fridge but I can guarantee it will be gone in one sitting, its so good!

Never thought of thighs in my burger bun, it's my favourite part along side the drumstick. Gonna try this when my granddaughter comes over, I'll supply the burger and I know she'll do the cocktails 😂 🤣 Another lovely feast, thank you chef 😋 😋

This looks so damn good, I can eat 2 of them! You should try it with fried, salty cod fish, with this delicious Greek garlic sauce, 'skordalia', in place of the mayonnaise, and a squirt of lemon....you will become addicted! Whoever lives with you is super lucky to eat your cooking...

awesome burger! i did make a crispy zinger style burger at home but to marinade the chicken i used the spicy sauce of the fire noodle, cus it has a lot of good flavour not just spice, and it turned out amazing.

Made the chicken as an entree but I didn't have buttermilk so I substituted with equal parts of lime juice and soy sauce ( a typical Dominican Republic marinade for chicken) together with the spices you indicated. It came out absolutely delicious with the spicy mayo as a dipping sauce,
