You got everything right until the end. You always place fish side down. Fish then rice is how it is done in Japan.

Sushi is much more commonly eaten with your HANDS. In fact, sushi is meant to be eaten with your hands in the first place!

Nigiri should be turned sideways before being taken by the hands or chopsticks, and put in the mouth upside-down so you have maximum contact between the fish and the tongue.
And by the way, the more traditional way (and also in fine restaurants) to eat maki or nigiri sushi is with your hands.

a sushi chef trainer in NYC said to eat the sushi with fish on top, you invert and eat with hand.

my japanese sushi trainer taught our class that:
- you should lightly dip nigiri sushi into soya sauce on the fish side and do not dip the rice, since it will absorb too much sauce...
- and then eat it, fish on top, one bite only, and this is why nigiri sushi dimension should fit the mouth pleasantly, not filling it too much...

Wait, so how do you eat maki with soy sauce? I almost never order nigiri. If the rice part can't be dipped in soy sauce, how do I do it with maki??

In japan well the more modern way.. not many dip the fish side to the soy sauce it now how you want and you don't have to eat it all at once, you can take half a bite of it. :]

But what about the shrimp nigiri??
(I live in America and when we eat shrimp we pull the tail/outer part of the shrimp off, when I see shrimp nigiri they still have it on, so am I suppose to eat it too or what do I do??) there was a picture of it in the opening, but then he didn't show how to eat it

I have always used to put wasabi and ginger on the sushi, dip it in soy sauce and then eat it... Have been doing it wrong?

also the wasabi doesn't go in the sauce, a small bit is put directly on the sushi.

I live in America and pay for sushi with my own money - I eat sushi the way I want to. Sometimes I use my fingers to pick up nigiri and sometimes I put extra wasabi on the maki. sometimes I drink green tea and sometimes I drink coke. Eat sushi the way you want to eat it not the say "you're supposed to".

What do you mean "do not use the chopsticks in the usual way". The usual way for me to use chopsticks, is to execute the way you said was the "correct way". I have never used a single stick like a cocktail stick and know nobody that does it like that.
P.S. where is the wasabi?
