Rick Bayless is awesome. Had the opportunity to eat at Topolobampo 20+ years ago. I remember having really good frog legs. Paired with some smoky Mezcal.

That's actually a new concept for me. So it should almost taste too strong and salty to properly do it's job flavoring the meat.
