We get a hint to one of the sequel’s villains. After Shrek saves Fiona and she is disturbed to find out that he’s actually an ogre, Shrek sarcastically asks if she was expecting Prince Charming, to which Fiona replies “well, yes actually…” before trailing off and losing her train of thought. This a nod to the character of Prince Charming arriving late to save Fiona in Shrek 2, leading him to becoming a villain for the sequel and also Shrek The Third.

Shrek is a deconstruction of fairy tales, and Prince Charming is a trope of said fairy tales. There was no plan for the literal character of Prince Charming, and his introduction in the next movie is just the logical conclusion of the deconstruction.
