Since Fiona is an Ogre and she needed to eat, you could say that all the knights who tried to save Fiona died in some way by either the Dragon or by the collapsing state of the castle. Thus leaving Fiona transforming around Nighttime to take the knights that didn't make it and cook them. Seeing that there is nothing else 'to eat' this would probably be the most logical answer and as to why there were no witnesses of Fiona's true form as they didn't live to tell the tale.
