I personally use 2 x Intel Xeon E5-2680v2 in a HPZ820 workstation w 128GB ECC RAM.
i write ML and analytic code in c++, Go and also do some kernel development on this system. It also runs multiple Docker containers for my home network like Home Assistant, Plex, Bit-warden and OpenVPN. i feel that for workstations where you are concentrating more on WORK rather than games or content, Old Xeon CPU's paired w Linux makes for a very powerful system capable of a lot.
Not to say that i don't game, i still play CS and a few games that steam has on Linux, and i do have a 3090 and 2 A1000s, you wouldn't have been able to run this setup on an i9 since PCIe lanes would restrict that.

MY SCHOOL LITERALLY DID THIS IS MY COMPURT LAB THEY GOT A SERVER LEVEL PC AND SOMEHOW MANAGED TO RUN 30-40 INSTANCES OF WINDOWS 10 ON IT
