My EASY chocolate cupcake recipe makes perfect, moist, fudgey, fluffy chocolate cupcakes topped with light, silky chocolate Swiss meringue buttercream. I’m warning you ahead of time, you’ll have ZERO portion control around them so invite your friends over to help out!

If you've tried my chocolate cake recipe then trust and believe these are the only chocolate cupcakes you will ever want to bake.

▢ ¼ cup sour cream room temperature 60g
▢ ½ cup buttermilk room temperature, 120mL
▢ 2 medium eggs
▢ ⅓ cup veggie oil 80mL
▢ ¼ cup hot coffee 60mL
▢ 2 tsp vanilla extract 10mL
▢ 1 ½ cups all-purpose flour 180g
▢ 1 ⅓ cup granulated sugar 265g
▢ ¼ cup cocoa powder 20g
▢ 1 tsp baking soda 6g
▢ ½ tsp kosher salt 2.5g
For the Chocolate Swiss Meringue Buttercream:
▢ 5 egg whites room temp
▢ 1 1/2 cups sugar
▢ 1 lb unsalted butter room temperature 450g
▢ 1 tsp vanilla extract 5mL
▢ 1/2 tsp kosher salt 2g
▢ 1/2 cup bittersweet chocolate

Can I just say his little side notes like 'Oh I forgot the cocoa' or 'the coffee was supposed to be hot but oh Well' is just so relatable and makes me feel so much better about the way I bake😂

I made these and omg! They are amazing. This was my first time making and eating swiss meringue buttercream. Let me tell you, I will never use any other frosting. It's that good. This recipe was so easy to follow. Thank you John! My in laws and husband loved them! (And my husband is not much of a cake fan!)

Recipe
Dry mixture
1 1/2 all purpose flour
1 1/3 cup granulated sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cupCocoa powder

Wet mixture
2 medium eggs
1/4 cup sour cream or whole milk yogurt
1/3 cup vegtable oil
1/2 cup of buttermilk or milk with white vinegar/lemon juice
1/4 cup of hot/warm milk
2 teaspoon of vanilla

I made these cupcakes for my son's birthday last weekend. OMG, I made 40 cupcakes and all gone in 1 sitting. Everyone had doubles and triples. So so moist and yummy!

I made this for my son’s bday and it was a hit!! We loved how moist the cake was and chocolate meringue was soooo delicious!! And yes, do not overfill it because I did hahaha but still was a success! Thanks john! I always follow your recipe and thank goodness always turns out to be a success!!
