How to Make Perfect French Madeleines at Home | Classic French Madeleines Recipe with Perfect Hump

French Madeleines
(Makes about 16 madeleines)
Ingredients:
125 grams butter, melted
150 grams all purpose flour
1/2 teaspoon baking powder
1/4th teaspoon salt
2 eggs
90 grams caster sugar
40 grams brown sugar (dark or light)
20 grams honey
1 teaspoon vanilla extract
40 grams milk
Process:
1. In a bowl, melt some butter and keep aside
2. In another bowl, sift in your all purpose flour, baking powder and salt
3. In another bowl, whip eggs, both sugars, honey and vanilla extract for about 2 minutes.
4. Sift the dry ingredients again into the whipped eggs mix.
5. Fold gently until the dry ingredients are almost integrated.
6. Then add the milk and fold again. Mix with electric beaters on low speed for 10-15 seconds till just combined. Do not overmix.
7. Pour the melted butter in a steady stream along the side of the bowl.
8. Fold until incorporated.
9. Cover with cling wrap and refrigerate for at least 2 hours or up to 24 hours. Also refrigerate your madeleines mould tray after greasing it with butter and coating with flour.
10. 20 minutes before you are ready to bake your madeleines, preheat oven to 250 Celsius.
11. Pipe the chilled madeleines into the chilled madeleine tray 90% of the way through.
12. Bake in the oven at 250 Celsius for 2 minutes then lower the temperature to 180 Celsius and continue to bake for another 9-10 minutes.
13 Take the tray out and let it sit for 5 minutes. Then tap the tray hard against the work surface to release the madeleines.
14. Enjoy with a cup of tea or coffee
