✅Ingredients

• 6 ears corn shucked
• 1/4 cup mayonnaise
• 1/4 cup Mexican crema or sour cream
• 1/2 cup grated Cotija cheese
• 1/2 teaspoon ancho chili powder
• 1/4 teaspoon salt
• 1/4 cup freshly chopped cilantro
• 1 tablespoon Mexican hot sauce

✅Instructions

1️⃣ 00:00:06 - Wrap the corn in aluminum foil and place on a 400 degree grill or in a 400 degree oven for 15 minutes. Unwrap and set aside to cool.

2️⃣ 00:01:05 - Meanwhile, in a small bowl whisk together mayonnaise, Mexican crema, 1/4 cup of Cotija cheese, chili powder, and salt.

3️⃣ 00:00:41 - Cut corn kernels from cob and stir into mayonnaise mixture.

4️⃣ 00:01:53 - Sprinkle with remaining Cotija cheese and cilantro. Dot with hot sauce.

I must say, I'm sooo happy you showed how to do roasted elote!!!! I don't like it any other way!!! Omg I LOVE mexican corn. I usually put mine in the oven for about 40 min then broil until browned but nothing beats grilled corn lol! Except for I dont wrap mine in foil if I make them on the grill because I love that charred taste 🌽🌽🌽

Yummy. Another version I can try. I used cumin and frozen corn works well but you don’t get the freshness.

Getting ready to make some form of this. I just sampled the cotija cheese I bought today to find that it's incredibly salty. I may go with parmesan as some do.

thanks for the recipe i never added sour cream to it before. i only used mayo here's a tip if you can get fresh corn just take the silk off it leave the green outer part on and put it in vacuum sealed bags and put it in the freezer. that way it's like fresh corn when you take it out if you blanch the corn it will get mushy. i usually stock up when the price is down.
