Wow! Warning, don't watch this when you're hungry and don't have any brisket, or you'll be very jealous! Makes me hungry just watching. Some day, maybe I will get brave and try this!

Crank the temp up a little after unwrapping to set the bark again. The steam makes the bark mush but it will come back if you let it cook a little longer unwrapped

Everyone does brisket in their on way. I was gifted a fairly used pit boss that showed extensive flair ups and fires. I'm cautious about too much grease drippings and will probably try it over a grease pan with a grate on top. My first attempt I just put it in a large pan.
Hopefully this will prevent over cooking the flat. I've always only used offset smokers. With the pit boss I see the area where the Fire cup is and above that is a major hotspot, so I smoked my brisket in a large pan. It turned out ok. Interesting to see how others are doing this on their pellet smokers. Thanks for the video 👍

You have great material sir. I recently bought a PIT-BOSS820 from Costco after watching your review on it I was really impressed. Tonight's recipe will be ribs to get it all messy but I will definitely be making one of these briskets in the future.

Do you use DRY pellets or do you use WET pellets. It looks like the 820 uses dry pellets but I have seen other smokers that use wet pellets in a tray of water. Thoughts?

just picked up a 820 Pro. Will be doing a brisket very soon and plan on just doing a Salt and Pepper (Texas) style. I see you use the Veken thermometer but do the temp probes that come with the Pit Boss work well?
