Hi, FEATR Fam! On 0:54, our text says that you can substitute with cake flour or whole wheat flour. He actually said that you CAN'T substitute it with those!

Chef martin made this numerous times your cinnamon rolls my kids and husband liked it so much and also uses the bread recipe for cranberry bread and just plain bread rolls. 😊

Made this today so fluffy ...but I made my own icing with cream cheese and its so good !!! Hubby said that the filling is not too sweet like other recipes. I will keep this recipe and method..Thank Chef Martin :) I wonder if I can use the dough in ensaymada??? More power <3 Algiene (Justin's wife) P.S. I baked some this morning, made some substitutions though, as I only have 2 cups of bread flour left and so I added 2 cups of All Purpose flour for the reqd 4 cups. Used undiluted evaporated milk to replace the fresh milk and salted butter and still put in 1.25 tsp of salt. Since I'm using a gas oven, baking time was longer - around 30 mins. Am happy with the result, fluffy and soft:D

Will turn this recipe into ensaymada next time hihihi...

Disclaimer: this is a long comment but might help some of my fellow bakers esp beginners. 🙂

First of, would like to thank you for this recipe before i start rambling. 😅 thank you!

What i had:
- recently switched to diff brand of flour and this one is a very thirsty flour 😂 not joking!
- used combi of bread and apf - i like the resulting bread of this combi

What i did before i started baking:
- computed for hydration using King Arthur’s guide and came out at around 45% hydration, so i’m expecting a very manageable dough. I’m used to making tangzhong breads where it has higher hydration.
- doubled the recipe to make more breads (I shouldn’t have 😩)

Time to mix and knead!
- measured all ingredients using scale
- after mixing all the ingredients together the dough was still very dry, the egg and milk wasn’t enough to form a proper dough
- i ended up adding 100g-ish of milk! Just to get it to form into a proper dough, at this point i wanted to cry and just throw the dough
- i only knead by hand coz no stand mixer (baka naman may extra kau dyan 🤣) so this took around 15mins to knead. Had to let it rest for 10mins towards the end of kneading then kneaded for maybe a minute to finish off for bulk fermentation

As of this moment, waiting for bulk fermentation to be over and by the looks of it this might not be as soft as the one shown in the video. We’ll seee!

Lesson learned: test recipes in small quantity first 😆

Ched, recommended speed for kneading is number 2 lang sa kitchenaid 🙈. Kaya po mag wawalkout tlaga ung kitchenaid sainyo 😂. Sometimes I put mine on 3 kasi parang mabagal ung 2 pero that’s how far I’ll go.
