8 Egg Yolks
375g Caster Sugar
Zest Of 2 Large Lemons
The Juice Of 4 Large Lemons (aprox 190-200ml)
220g Unsalted Butter

Great video and it did look easy. Egg whites will they freeze okay? we like lemon cord in a sponge cake i must make a couple of jars

I assume you know you can freeze egg whites, you can also freeze egg yolks, but if you ever goto use them, both of them can only be used by being left out and brought back to room temperature, you cannot use them if you try to microwave defrost them.

I loved this recipe, do you use farm fresh eggs or store bought, because your egg yolks seem to be more yellowy where as I am in Australia and we have more orangey sometimes dark sometimes light orange in color, also sometimes our eggs have double yolks as well.
