I recently found your recipe and it's fabulous!! Here in Arizona at 3500 ft I had to adjust the temp and raising time but that was easy. This bread is delicious and easy to make!! I bought a 'Sourdough Cookbook' last year, and the types of flour and complicated directions are just too much when you're busy. Having grown up on a ranch with my Mom's sourdough bread, I knew it didn't have to be so complicated, and you have proved that. Even my husband likes it, and he's not fond of GF foods.

Getting ready to try this today. Husband was just diagnosed with celiac disease, and I am an avid sourdough glutenous baker. I will still make me some bread every now and then, but it will be difficult to I not cross contaminate. I figured I would just learn GF Sourdough. This looks like a good place to start.

I'm excited to give this a try. Just set up my starter and I'm trying to figure out the best place to keep it. My house temp is not consistent. I have a seed starter mat I may use on nights that are cold outside. My house temp runs 63-70 at time and 68-76 during the day when the fireplace is going. I guess 63 degrees will just slow the growth down? Is that right?

I cant use the GF flour mix as I have a wheat and rice allergy and cant have rice flour. Any tips on how to make my own blend without riceflour to get this type of bread?

I really like a sour sourdough. Does leaving the dough in the fridge longer achieve this?

Hi there you said this recipe is a tiny bit versatile. My dough keeps turning out extremely sticky. It looks nothing like your dough, Could I reduce the amount of water by 20 g and up the amount of flour by 20 g?

How do you maintain the starter? Do you store it in the fridge then take it out to feed it once a week and then leave on the counter or put back into the fridge?

I received my starter freeze dried and have reconstituted it and upkeep it, her instructions are to feed 30g starter, 125g water, and 140g bobs red mill 1-1. My first few attempts have been gummy still with following every instruction imcluding waiting about 6 hours to cut the loaf. Could this be because of not doing a 1-1-1 feed before baking?
