No offence but if you're going to slice and fry every fish you catch without actually preparing it PROPERLY you'll never know how good they truly taste. Try baking, steaming or stewing fish.. some fish are ruined if you fry their flesh. Another tip, actually SEASON the fish properly! use fresh Herb's and leave it in the refrigerator for a few hour's. That's how we do it here in the Caribbean.

The Crevalle Jack may not be anything special fried, but it is a great fish to cook other different ways. Even the big ones. There's a reason they farm them off the coast of Hawai'i

Jack Cravalles are GREAT, it's the cook!!! Remora Eels requires a cook that KNOWS HOW TO COOK EEL to make them come out good, too. The blowfish (which IS the Puffer Fish) is EXCELLENT in Sushi...IF YOU HAVE A TRAINED SUSHI CHEF prepare it for you (and yes, it CAN be deadly if not)...and in you slamming catfish, all I can say, is you need to move inland and buy a farm...because CATFISH IS AWESOME! ALL catfish are AWESOME! (clearly, it's a MISERABLE COOK issue at work, here!)

I am actually a professional chef, and the northern puffer fish is a target on my bi-annual trips to the Carolina coast. They aren't toxic, and are perfectly safe to eat without special preparation skill. The striped burrfish, though less common, is also present on the Atlantic coast. They are used as aquarium species, and generally not large enough to bother with eating. The northern puffer are easiest peeled with pliers by making a shallow cut across the back of the head and then down the back of the body (in a T shape). Their flesh is in two loin pieces down the spine. For those of you familiar, they are similar in taste and texture to frog legs. They are one of my personal favorites. Do yourself a favor and try them sometime. As long as they are properly seasoned and aren't burned, they really is no wrong way to cook them.

Just ate a smaller jack my son caught just over 1lb small guy but in my opinion there better smaller and definitely bled out n scaled. Heavy season with garlic lime sea salt n pepper and char grilled finish with more lime and they are good . Proud of my 6 year old son for catching it not being scared to stick a knife to bleed and ate it and liked it now I can throw his Nintendo overboard and get him a new rod for his birthday

I live in Hawaii, all types of Jacks and ladyfish are eaten here and are considered great eating because here they have white meat and taste great. you mentioned people in Hawaii eat them, and I guess it's a difference in environment that makes the fish better quality. I've seen the videos of jack crevalle in Florida and the meat is oddly red, so I guess it's just different depending on the place 🤷‍♂️

Jacks are fine to eat if you prepare/clean the meat properly. I've had BBQed Jacks and they were very tasty. You should probably avoid larger examples due to ciguatera. A guide gave me a rule of thumb of not taking the ones that are longer than your forearm.
From personal experience: Don't eat Barracuda.. no matter how it's prepared. I let myself be talked into eating grilled Barracuda filet by a local guide in Egypt and it was just terrible. Fatty, oily and it had a very strong, unpleasant fishy taste. Definitely a fish to avoid.
Wahoo: While delicious when BBQed, I wouldn't recommended it as Sashimi. A buddy of mine insisted on having it raw, against the protestations of the skipper. The taste was alright, but the texture was like sandpaper in your mouth. Throw it on the grill and it's excellent.
Bonefish: Some locals in the Caribbean told me you could eat them when they're prepared properly, but I refuse to kill *any* Bonefish. They're so much fun in a fight and deserve to be released. Plus, from what I hear, they too must be pretty terrible, taste-wise.
