Given the size of the fillet, I think 500 is way to hot an oven. You risk drying out or burning - even at 15 min.

This looks good, I think if you blend the butter into the breadcrumbs you'll get a nicer finished product, also bake on a rack so it's not soggy on the bottom.

Well, I don't have any milk. I'm going to have to improvise. I'm going to try this with a beaten egg, with some light cream and some water. Mix that all together for the milk dip.
We'll see how that turns out. I do have bread crumbs. I might mix a tad of corn meal in it with a bit of all purpose flour. Salt, pepper and paprika for seasoning.
Oh, and I wont be using ground cheese either. I have it, but I don't like cheese on fish.
I know, I've almost completely changed the recipe, but you do with what you have on hand. But the lemon is a must, which I do have, thankfully! There's no substituting that.
500 degrees, I don't think I have ever run my oven that high before. This should be interesting.
