INGREDIENTS
2 tbsp olive oil
2 lbs chicken breasts skinless and boneless, cut into bite size pieces
1/2 tsp salt or to taste
1/2 tsp pepper or to taste
1 small onion chopped
3 cloves garlic minced
2 tbsp curry powder
1 cup chicken broth low sodium
14 oz coconut milk 1 can
14.5 oz diced tomatoes 1 can
2 tbsp tomato paste
2 tbsp sugar
2 tbsp parsley chopped

Making this right now and it smells AMAZING. Used chicken thighs, petite diced tomatoes, and added some grated ginger. Thank you for this easy go to curry recipe. I'll be serving this alongside some egg noodles cuz that's what my kids like. Really appreciate this simple recipe that I can play with in my own kitchen. Yummmm....my house smells good right now!!!

I made it and loved it. This recipe was missing 1 very important ingredient "Thyme". 1/4th teaspoon and bam instantly it all came together like a nice creamy curry.

When I first made this recipe I followed the instructions and measurements to a 'T', and it ended up tasting more sweet with a slight curry taste than I was expecting.

So I readjusted the measurements the second time and it came out great! I think the big take away was using reduced sodium chicken broth instead of regular chicken broth. I found out that there isn't much salt to counter balance the sugars that are in the roasted tomatoes, tomato paste, coconut milk, and the 2 tablespoons of added sugar to the curry.

I added 3 tablespoons of curry instead of two, and just to be safe I added 3 tablespoons of tomato paste, the third tablespoon being for color. I added the salt at the end so I could adjust it to my taste and it came out perfect!

I also added slices of both hot and sweet chili's to my curry to give it some heat, vegetables, and crunchy texture.

Made this today. I didn't have mint leaves so I didn't add any but it was sooo good and easy! Next time I will make sure I have the mint leaves ; am sure it will taste even better. Thanks for the recipe

Sometimes I add potato and cauliflower and skip the rice. Ive made it both ways. I dont use chicken broth or tomatoes but next time i will add tomatoes to it, i always forget to get em
