You can still do the onion trick with most flat top griddles today. Generally speaking, the edges of the flat top are the coldest part, so you can usually stash bacon and onions and mushrooms along the edge. But due to food safety concerns and such today, we now have to keep them in shallow metal pans/dishes instead of letting them sit and float there.

It's for a good reason, the food safety side of things; but it goes to show how something so simple can be ruined by the complexity of people.
