Ahhh. I was wondering what I was doing wrong! I was mixing the coffee and sugar with a spoon for a few seconds. Didn’t realize there was such a vigorous mixing process with the sugar! Also helped to see the color change. Thanks soo much!

Amusing COVID related note; a Cuban lady in Miami just told me that she has learned this for the first time during the COVID isolation, that she never had to do it before because of course coffee is sold everywhere in Miami. Where we were standing during this conversation you could see three places to have Cuban coffee, and there were more across the street.... I have just started trying to do this for the same reason, it was funny. I always thought this sugar technique was kind of a magic trick, and have seen it done a few times but never tried it myself until 2020. Thanks for the timely instructions!

I love 'moka pot' coffee. I have a collection of moka pots. This is the best video I've seen about how to make authentic Cuban coffee. I'll try it this way tomorrow.

Great video! Thank you! I love the idea of using a fork instead of a spoon. I'll share this with my daughter in Miami. My son-in-law is Chilean and he likes Cuban coffee, so she makes it for him every morning.

I use my Moka (cafeteria, greca) every morning, and I take it off the stove the instant I hear it gurgle so it won't taste burnt. It finishes brewing off the stove from the heat inside the pot. That's the traditional Italian way. I learned it from Moka tutorials by Annalisa J and I'm Barista Italiano.
