Oh so legends aren't canon? You know before Grievous was a cyborg he had a midichlorian count of almost 12, 000? Before he was a cyborg he was already regarded as a Demigod among his people for his great victories in the Huk war. He has mastered every lightsaber form, and he was designed to counter force users. Dooku is canonically afraid of Grievous, and had admitted that he could beat him.

Even if you use Legends Grievous, legends Dooku was handling him pretty easily in the sparring session in the 2003 show. Grievous is tough for a lot of opponents but Dooku probably knows most of his tricks and the moves in his unorthodox style since he trained Grievous. That, plus Dooku’s overall dueling skills and abilities with the force would give him the win.
