In my opinion, la lingua, the tongue makes the best barbacoa. There's something about the taste & texture that hits the barbacoa sweet spot. (No sauce needed, unless you absolutely insist.) It's a 'thang' in south Texas.

I’m from Texas. We traditionally use beef cheeks and cow tongue to make Barbacoa with. We don’t use short rib or chuck roast

I tried your recipe today. Barbacoa always tastes good but probably half my chuck roast wasn't fork tender after 4hrs on high. I forgot the line juice, would that make a difference in tenderizing the meat?
