Vegeta’s hair going green seemed to be an artistic choice to show more of a transition between base and SSJ.
Goku’s hair going white was him attempting to tap into MUI, given by y’know it being white hair and eyes.
Goku’s aura going green was Broly putting the God Bind back onto Goku, the green aura being from Broly’s signature ki color.

Some people were specutaling that they were trapped in the "Ikari Aura". As if Broly's immensive and unique SSJ form affected every Saiyan around them.

People whined when the manga has drawbacks but I love how the transformations have pros and cons and we were on a journey of progression as they slowly mastered these forms.

I personally just see it as a fancy way to show the forms. Think about it. If you take black paint, and add yellow to it, it has this greenish mud color. The more yellow you add the more green it becomes until it turns yellow and you cover up the black paint (this also depends on what black paint you're using as some paints have hints of other colors). This can be shown from the black hair that saiyans have turns greenish, as the yellow color hair tries to show up. In this case, it would be similar to how the SSJ hair could go from yellow, to orange to red when going SSJG. The whole "MUI" teaser they gave Goku when he was going SSJG to SSB never made sense to me, and instead makes more sense that if you add blue to red, you get this purple mixture, the purple along with Goku's base form (since SSJG is Goku's base form hair style) gave off the look of MUI, (not to mention the aura colors are also mixing at that point in time, hence why we not only see different hair color, but aura colors altogether in the film. We can see it when SSJG Goku all of a sudden has this green aura. The green aura is because SSJG's Aura—at least in this movie—is more on the spectrum of being red, but with values of yellow making orange. if you add blue to that, you gain a green color mixing the yellow aspects with blue. Hence why we see Goku with a green aura) all it was is the mixture of the colors, and them being fancy. But it just so happened a lot of the color mixing made it look like MUI or anything else the viewer can interpret.

I like to think it’s Goku and Vegeta trying to remove the green energy they got hit with from brolys energy, trying to remove it from their bodies to continue to transform

I think it's a subtle hint at the true nature of legendary super saiyan.

It's the true form of a saiyan that only one being has the potential to tap into who is born once every thousand years. If we go by these transformation styles as being canon, that could mean that every saiyan has a part of the legendary super saiyan transformation in them, but they simply cannot tap into it's power. That could be huge, as it may hint at a future legendary god transformation if they can learn to tap into it, with either UI or UE on top of it.

it's art direction. the broly movie played with colours a lot to make the fights and flashy animations look visually stunning. it's a very beautiful movie aesthetically

In reality it’s quite simple: since Tatsuya Nagamine (dbs: broly’s director) worked for Shigeyasu Yamauchi, the director of the first broly’s movie from 93, he wanted to make an homage to his mentor using the same method he used for character’s transformations which were based in this transitions of colours.

My headcanon, green conveys rising power, and since Broly's form was green, that means his power is continuously rising.

Its probably because they had the extra budget for the movie so they decided to make each transformation super extra and spectacular

I think the green colour aura shows sign of rage and that turned into energy. This probably explains why broly's aura, ki and abilities are green since he is all about explosive power through rage.

Vegeta’s hair being green was a fancy way to show the first transformation of the entire fight. Goku’s aura was green because of the bind broly put goku under while goku tried using it on broly, and the white hair was the sign of ultra instinct because goku had to power up very heavily to break the bind.

I like to think that Goku was trying to tap into Ultra Instinct again but he couldn't quite go that far on his own terms and was like "screw it. I'll go SSB."
