As someone from an Eastern European background, I just can't give up my white potatoes. Sweet potatoes may be somewhat healthier, but they just don't taste the same.

From a nutrition science aspect, it's not the potatoes alone which are providing the health benefits, but what they are replacing, because sometimes simply 'not' eating some very unhealthy foods can offer far more benefits than consuming more healthier foods.

I ride a 3-wheel stand up bike called a Me-Mover. Medical tests show it burns more calories and uses more muscle groups than. regular bikes or running. When I do distance rides I always pack my cooler with at least one baked potato. That always gives this old guy the much needed boost to complete the ride. I recently turned 69 so of course I did a 69 mile ride on my Me-Mover. Its the most recent video on my channel for anyone interested, and yes, the video shows taking the baked potato out of my cooler.

Ok for the nay sayers just get organic potatoes, no chemicals. To increase the resistant starch put them in the fridge over nite and the resistant starch content goes up... Easy peasy..

If it’s funded by potato research and it could be biased. Look into CONVERTING starchy carbohydrate foods into a much healthier RESISTANT STARCH (RETROGRADATION) by freezing ‘or’ refrigerator cooling ‘after cooking’ (pre-cooked) starchy carbohydrate foods (rice, POTATOES, pasta, and all cooked beans) for ‘at least 12 hours’ before reheating and eating them. But ‘freeze’ bread products and then very lightly thaw them out in the toaster before eating.

It’s the minerals present in the potato. They are necessary to diabetics for insulin production. The baking inside the skin retains more than boiling…and by not frying them or adding sauces creams and margarines/seed oils, it is a superior health food.

The results don't surprise me as the study replaced a low fibre source of carbs with a high fibre source. It would be interesting to see if similar results were obtained by replacing white rice with brown rice, or what result - if any - was found substituting white rice for peeled and boiled potatoes.

I'm certain there would have been even better results if butter [and other cholesterol and saturated fat sources] were restricted. A modest change will bring modest benefits.
