Instant Pots are nice for pressure steaming whole potatoes. This sounds good. I would try. No nitrates for me. Fresh pork belly from Costco maybe, salted in the fridge for a day or two, and then slice and chop and fry up like bacon: it is bacon w/o nasty preservatives. Green onions from the garden. I could do this.
