This scene was actually a blooper, he wasn't supposed to knock the chess game all over. They decided to leave it in it just looked so natural.

The judge wanted to personally fry Vinny. It was Vinny's fiancee, Ms.Vito, who got Vinny's hind end out of the sling; when she calls Vinny's friend in New York, (Judge Malloy, who is not seen in the movie) and has him attest to Judge Haller as to the brilliant legal stature of one "Jerry Callo." Haller goes from hating Vinny to shaking his hand and complimenting him.
