Homemade Cheesy Stuffed Bell Peppers
Ingredients:
For cooking the rice:
Zatarains Red Beans & Rice
2 tbsp. Butter
3 cups beef broth/water
1. Prepare a cooking pan add 3 cups beef broth, 2 tbsp. Butter and the Zatarains Reed Beans and Rice. Mix a little bit then simmer for 25 minutes.
For Cooking the Ground Beef:
1 lb. ground beef
Chopped onion
Mince garlic
Chopped green onion
Red chili flakes
Beef Bouillon cubes
Bell peppers (leftover from the stuffed bell peppers)
1. In a pre-heated pan on medium heat, sauté garlic, onion, bell pepper and set aside.
2. In the same pan, add the ground beef and brown it. Drain most of the liquid.
3. Add the sautéed garlic, onion, and bell pepper. Add beef bouillon cube, ground black pepper, red chili flakes, green onion, and a little beef broth. Mix thoroughly.
4. Add the cooked red beans and rice and mix thoroughly.
For making the stuffed Bell Peppers:
Different color Bell Peppers
Grated Cheddar Cheese
Grated Mozzarella Cheese
1. Prepare a baking dish, use a foil to hold the bell peppers if needed.
2. Scoop rice and beans mixture and put it inside the bell peppers then add lots of cheese.
3. On a pre-heated oven @ 350 Deg. F / 177 Deg C. Bake for 10 minutes or until the cheese is melted. Cool it down before serving.
