Creamy Lemon Chicken Pasta Recipe

This creamy lemon chicken pasta is quick, easy, and ready in just 30 minutes! Perfect for a delicious weeknight dinner.

Chicken Pasta Ingredients:
►12 oz Fettuccini pasta or Spaghetti
►1 lb boneless skinless chicken breast (2 medium), cut in half lengthwise
►1 egg
►1 Tbsp milk
►1 cup bread crumbs
►1/2 tsp salt
►1/8 tsp black pepper
►2 Tbsp olive oil

Lemon Alfredo Sauce
►4 Tbsp fresh lemon juice (from 1 large lemon), divided
►2 Tbsp unsalted butter
►2 garlic cloves, minced
►1/4 tsp onion powder
►2 cups heavy whipping cream
►1/2 tsp salt
►1/3 cup parmesan cheese
►1 Tbsp parsley, optional garnish

Oh my gosh, Natasha!!! I made this for lunch and it was outrageously delicious.
Here's the funny thing....half way through the meal, my fiance asked what we were eating and I told him lemon chicken alfredo. He said he couldn't tell it was lemon even though I had used a whole lemon in the recipe...so I asked him to go pick me another lemon off our tree out back. He brought it in, I sliced it in half, turned the heat back on the alfredo pasta pot to medium low, and slowly added half of the lemon's juice into the sauce and pasta, and the other half of the lemon juice to the chicken and had him taste it again. His eyes got all wide and shiny, and suddenly he was gobbling the pasta and sauce right out of the pot! I had to fight to get the fork back from him.
Moral of the story, you can't overdo it on the lemon...and next time I make it, I won't let my fiance into the kitchen while I'm cooking unless he's bringing extra lemons for the sauce and a bottle of wine for the cook.

I always mix part regular bread crumbs and part Panko, unseasoned of course as I season them myself. Helps them stick better and still gives that Panko crunch.
