Pre-grated cheese does NOT work the same. The pre-grated cheese is coated with corn starch to prevent clumping in the bag...this coating cause the cheese to not melt as well and you’ll end up with a grainy, unpleasant texture to your sauce. Also, avoid sharp cheddar for this and stick with mild or medium cheddar to avoid a stringy consistency. Otherwise great video!

Don’t use pre-shredded cheese. The reason that pre-shredded cheese doesn’t clump together in the package, is because it’s covered with anti caking powders. You definitely do not want that chemical garbage in your sauce.
