I've taken food prep classes and we do something similar but you always cut both end off. That way you can stand the watermelon up to quarter it without the danger of it rolling around while you try to cut it with a shap knife.

I've always done this exact thing but I cut the watermelon into quarters longways and then cut it. This gives you more to hold onto than the smaller eighth of the melon and works just as well.
