3 Ingredient Peanut Butter Cookie Essentials:

Peanut Butter Cookie Ingredients:

1 Cup (256 grams) natural peanut butter
1 Egg ... *Add 2 extra yolks (some people have said their cookies were on the dryer side)
1/2 Cup (80-90g) Erythritol

Cookie Instructions:

Pre-heat your oven to 350 Degrees
In a large bowl add/weigh all of your ingredients
Mix all of the ingredients together with a spatula until a thick dough forms
One the dough forms, cover a baking sheet with parchment paper and add 12 cookies to the sheet using a cookie scoop
Bake the cookies for 5-6 minutes, score the tops with a fork, and then cook an additional 5-6 minutes
Cool the cookies completely in the tray, and then transfer them to a plate

Macros per cookie:

140 Calories
Fat: 11g
Carbs: 4g
Fiber: 1.5g
Protein: 6g

*Note: Erythritol is a 0 calorie sweetener. As such, the macros/calories do not include it.

If you like a more cake textured cookie add 1/2 tsp of baking soda.

Some people are complaining that their cookies remain wet or crumbly after coming out of the oven. I had that problem with my first batch. I've learned two tips that help prevent that now: (1) bake for 20 minutes. 12 minutes doesn't seem to be long enough. (2) they must cool down completely before eating them. Resist the temptation to eat them warm out of the oven. They will fall apart. Let them come down to room temperature and then put them in the fridge for about an hour or two, or until they firm up.

You know what I like about his recipe videos...there always short and sweet. Most channels have 7 or 8 minutes of stirring and mixing filler.

I added the two yolks as recommended - good call! I also added half a teaspoon of vanilla. I suggest trying that.

I watched this video while eating dinner, and then, a short time later, I was eating peanut butter cookies for desert. Yummy. Forking the batter before placing in the oven worked just fine. My cookies needed to cook for almost 20 minutes before they started to brown. The cookies are very delicate while cooling.

I made a double batch of these with a slight twist... For the sweetener, I used half Swerve granulated and the other half Swerve brown sugar. OMG! They were wonderful!!!

Hi Joe, Wanted to share I've made your keto peanutbutter cookies 4 times and this time I used no sugar organic crunchy pb (Sprouts) and added a small amount 1/4 c. Lilly's chocolate chips and they are an awesome change up to the recipe. Thanks for all your stuff please keep it up.

Joe, I made these cookies using fresh ground peanut butter from the local co-op. They were fantastic. I added a tiny sprinkle of coconut palm sugar. I stored them in the freezer, which seemed to make them even better - nice and crunchy with great flavor. Of course I ate them in just a few days. Today I made more. This time almond butter (unfortunately in the jar) and I must say they do not compare to the fresh ground peanut butter. The almond cookies are so crumbly they fall apart and have so little flavor; real disappointing. Guess it wasn't meant to be (that is that I should take a rest and not pig out again). I believe the almond butter had too little oil in it, where the peanut butter had plenty. Thanks for such a great recipe.
