Those babies look fantastic! As a Mexican cook, I must warn everyone to never touch spicy peppers with your hands after they've been cut. Use utensils, gloves, or rub your hands with a thick layer of oil before handling them. For those of you who like spices, add onions and dried oregano if you want to keep it simple. Or, add thyme, garlic and a bay leaf for the full rounded flavour. All of these go in small quantities for this type of picking.
For the original flavour, you first sweat the whole peppers, onion and a few carrots slices in a bit of oil on high heat, add the herbs at the end for a few seconds. Then add the vinegar mix and let cool before placing the lid.
