Different Irish pubs I've gone to here in Nova Scotia make boxties and they serve them crepe-style, folded over some sort of savoury filling (meat or fish, veg, sauce). Kind of an Irish burrito!

My Mum's from Longford and makes the pan boxty without mash. She uses the side of the cheese grater that looks like it has been punched with nails, so it's finely grated. Potato water removed, milk added, flour, baking soda, and loads of salt. All done by eye, not measured. I've made some for St. Patrick's Day, popped in the freezer until then. Mine never ever tastes as good as Mum's!!!

My mother made these without the grated potato from left over mashed.She learned from her Irish mother. Or just greated potato.both called potato pancakes

My mother made basically the same thing when I was a kid from leftover mashed potatoes and called 'em potato cakes. We're American. Definitely not Irish. Yet probably your cousin, just the same.

You can make a sweet version with grated apples instead of spuds. My son used to love them.
