I've been making and eating boxty my whole life. Boxty basically means "poor-house bread" and if you're interested in the Gaeilge name for it, that can be found online. It helps if you sift the salt and baking soda into the flour first, make sure it's well dispersed and then add that to the potatoes and then of course the milk. You can also use buttermilk and that can make it a little fluffier, as it interacts with the baking soda. Great video! You can put pretty much anything on boxty but my favourite way to eat it is either as a scoop for stew, soup or with meat pies or late at night with a bit of honey on it. It's also great with mushrooms.

I'm gonna try this recipe. I actually have several different varieties of Jelly (grape, apple, and BlackBerry Jam). I have sour cream, and I have apple sauce to top it. I also have some onions to chop up and throw into the batter. I've never tried it before with mashed potatoes? That's an amazing idea!
