Irish Boxty
Boxty is a traditional Irish potato pancake, the popularity of boxty has risen over the last couple years. There are 3 different varieties of Traditional Irish Boxty: Pan Boxty, Loaf Boxty and Boiled Boxty, named after their method of cooking. I’m making a pan Boxty, with a twist, adding some green veggies into our recipe. This delicious side option is a mix of creamy mashed potatoes inside with a crunchy outside layer. Sure, to please your guests and quite versatile as a side option to any menu.
