CHRIS’S BOXTY ☘️

Good afternoon folks! This is the video for the Boxty photo I posted yesterday. This is a type of potato pancake that originates in Northern Ireland and there’s a few different ways to make it all depending on what region you come from. Some areas use raw potato only so I may get a bit of stick here 😄

This was quite spontaneous and I was able to use up a few leftovers in the fridge.

Recipe

200g of boiled mashed potato (2 medium)
200g of raw grated potato (2 medium)
Pinch of salt & pepper
1 beaten egg
1-2 chopped spring onions (optional)
4 heaped tbsps of flour
1 heaped tsp of baking powder
Drop of Buttermilk or regular milk

*Note - If using buttermilk you can use 1 heaped tsp of baking powder or about 1/2 tsp of baking soda. Both are optional. It’s used to give them a little lift

Fry them in butter, oil or a bit of both on a medium heat for about 4-5 minutes. The combination of oil and butter actually stops them from browning too quick. Mine were grand though. These go great with a fry! Well they go great with anything really so get cracking

You’ve done the griddle version, any chance of a baked boxty done in a loaf pan? Even though I’m from Fermanagh I still prefer it to the boiled version.

I usually fry some onion (chopped small) and add to the mix. Adds a bit of flavor.

Well done lad, thanks for this, I just made some as a practice run for culture day tomorrow in the school here Costa Rica hope they like but sure who wouldn't 😅. I had an issue with water in the grated spud part, I made it the old way without mashed spuds, im thinking cheese cloth to squeeze out the water, on a time limit as it will turn on me 😅.
Some info about Boxty; Some say that the name boxty derives from the Irish language name of arán bocht tí, with the literal meaning of poor house bread. Others say it comes from the word bacstaí – to bake. Its origin dates back to before the famine times.
Boxty is an authentic Irish dish which originated in the 1700s. It was a staple food in Irish households where potatoes were relied upon to survive.
