Manx kippers I understand use Norwegian herring whereas Scottish kippers are sourced from the north east Atlantic (uk waters). For me Stornoway or Mallaig kippers reign supreme!

Nope your wrong maybe some of the PD guys use herring flaps for supermarket boil in the bag kippers, but all the so called kippers are from frozen large herrings, I know I grew up in a fishing family.
