How to cook Craster Kippers

Kippers are salted and smoked herring fish. Eaten with toast for breakfast they'll set you up for the day ahead.

Grill for 5 minutes flesh side, then flip and cook the other side until the skin starts to separate from the flesh. Look out for the curling tails touching the hot element!

The best kippers come from the village of Craster in Northumbria, UK where they're caught and smoked locally.

Most satisfying video I've seen in ages! I'll save this for when I'm feeling down only problem is now I'm hungry! Just ordered £35 worth of kippers from Douglas. The only thing I might do different is cook the backs first then when I turn them over put a little bit of butter on them. Can't wait

My friend and I have a debate about kippers-I say you should always eat them with toast anmd marmalade or jam as it helps to digest them and he says that is wrong.

Nah! Add 1/4" of boiling water to the base of the grill pan, grill only on the flesh side until they get a light colour and serve with crusty bread and butter.

My partner cooks Craster kippers in a different way. 1. Lay the kippers in a pan that's deep enough to allow water to cover them. Pour boiling water over until the fish is completely immersed. 2. Leave for about 5 to 10 mins. This takes out a lot of the salt, oil and 'debris' and you get a milder taste. 3. Transfer the kippers to another dish and cook, in the microwave, for about 4 mins on half power (they won't splatter if you do it this way). 4. Remove from microwave and the kippers should be curved and that enables you to remove the back bone in one go. 5. Serve with a little butter or lemon juice and some brown bread and butter.

What a shame - best kippers in the world and you decimated them! Ever heard of the art of cooking? Your video is far from educational - anyone can throw something on a grill!

Instructions for beautiful moist kippers with crispy skin:

1. cook skin side up on pre-heated grill (important, or kippers will dry out before being heated) until skin is just crispy - lots of nutrition in the skin but slimy fish skin doesn't work on the pallet. Crispy skin is much more satisfying and adds texture!

2. Turn (flesh side up) and place a nob of butter and ground pepper (highish) heat. You only have to get them up to temperature - as opposed to double cook them (smoking cures). keeps them moist and juicy - as they should be.

Voila, you have one of the most satisfying and cheapest healthiest meals there is.

P.S: for great ease of cleaning and less fishy odour around the house, I suggest one use some foil (carefully turn foil up around edges to prevent spillages). Pour precious residual juice on top of kipper after placing them on a plate and then scrunch foil and throw into recycling bin.

Look at the bright side - if that was rice-paste encrusted Tiger bread you used for the toast - your video wasn't a complete disaster.

All that washing up! Just buy the boneless fillets in a boil bag. Taste just as good.
