My 'diet wonder' Greek Salad recipe-

2 metric cups of cucumber (chopped into thick slices then halved) - about 1 large lebanese cucumber
2 metric cups of cherry/roma type tomatoes ( cut into halves)
1 metric cup of red or green capsicum chopped
1 metric cup of red onion chopped ( fairly fine/not diced)
1 metric cup Kalamata olives
1 block Fetta cheese (200 grms) cut into small cubes
1 metric cup of canned (drained) beans (red kidney or mixed)
Big handful each of parsley and mint (finely chopped)

Makes up a large batch that lasts me for four days for lunch

When served up in bowl at lunchtime to eat - add:
Balsamic dressing - I like the Colway Premium Balsamic & Roasted Garlic (from Aldi)
Protein source: I add tin (95g) Sirena Tuna in oil (drained) or some cooked shredded/chopped chicken
Half an avocado sliced - really is the 'icing on the cake, ha ha"
