Homemade popping boba - DIY

Making popping boba at home is quite pleasing. It is also known as bursting boba. You can replace it with regular tapioca pearls. We share three unique ways of making mango popping, watermelon popping, and coffee popping.

——mango popping——
2 tbsp. mango cubes
200 ml water
3 g sodium alginate

——coffee popping——
1 tbsp. instant coffee
30 ml hot water
180 ml water
3 g sodium alginate powder

——Watermelon popping boba——
200 ml watermelon juice
3 g sodium alginate powder

——calcium lactate water base——
1 L water
30 g calcium lactate powder

Hi thank you for sharing. Just a quick feedback. Could you please tell me how much alginate sodium did you add in how much mixture of water + fruits Juice ?

The Quantity of alginate to mix with the liquid is very hard to find. So far my mango popping boba burst perfectly after being out of lactate calcium bath.

However after a day in the fridge they don't burst anymore. They taste like agar agar fruit caviar. No more popping liquid.

If you could add some details and tips or mistakes to avoid.

It could be so helpful as a lot of youtubers only show the good atempts but never the fails atempts of this popping boba recipe.

I've heard of agar agar and carrageenan, but sodium alginate is new to me
