**EXPLANATION**


BASIC EXPLANATION :- sodium alginate was added to water making it denser (jelly like). hence allowing it to remain in same shape even after getting out of oil.

COMPLEX EXPLANATION :-
So sodium aliginate is a hydrophilic substance and when it is added to water it increases the polarity of water hence making it denser or gluttonous or jelly like which reduces it's fluidity making it possible to give it rigid shape and allowing it to maintain its shape even without external influence. when this solution of water and sodium alginate was added in oil, the oil being fat is a non polar substance and water is polar and hence water molecules and oil molecules don't mix allowing water droplets to form.but water being denser than oil settles down and forms a flat sheet layer of water this will combine all the droplets into one flat sheet ruining our objective but since the oil was cooled in fridge it increased the density of oil allowing for even slower flow of water and making it possible that individual water droplets don't mix. by meeting all these condition it is possible to have individual intact water droplets outside of non polar environment
