You can put a yoga mat or pad behind the pad on the shins for the leg extension to increase depth too.

With the leg extensions and leg curls hes talking about active insufficiency. Which means you stretch the muscle at one joint while contracting it at the other joint. Also if you want to isolate more vastus medilis (tear drop) or lateralis you can perform leg extensions with more hip flexion.
