Hey gluten-free friends! Want to meet your new favorite dessert that doesn't require any unusual ingredients? I've got a dead simple solution: it's an oatmeal-raisin cookie that uses oats in place of flour. These chewy, sweet treats are a cinch to put together -- just cream butter and sugar, toss in the additional ingredients, and bake until crisp. These little bites of perfection are guaranteed to be a hit that everyone (even gluten-eaters) will absolutely love!

Sarah's Tip of the Day:
This recipe calls for golden raisins, but any dried fruit would work well.

TOTAL TIME: 1 hour
YIELD:makes 3 dozen

INGREDIENTS
4 1/2 cups gluten-free old-fashioned oats, divided
2 tablespoons cornstarch
1 1/2 teaspoons ground cinnamon
1 teaspoon gluten-free baking powder
1/2 teaspoon fine salt
2 sticks unsalted butter, room temperature
3/4 cup granulated sugar
1/2 cup packed light-brown sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup chocolate chips
3/4 cup raisins

COOK'S NOTE
Chock-full of chocolate and raisins, these oatmeal cookies won't disappoint. And by using oat flour in place of wheat flour, everyone can get in on the fun.

DIRECTIONS
STEP 1
Preheat oven to 350 degrees. In a blender, process 1 1/2 cups oats into a fine meal. Whisk together ground oats, cornstarch, cinnamon, baking powder, and salt.

STEP 2
In a large bowl, using a mixer, beat butter and sugars until light and fluffy. Beat in eggs and vanilla. With mixer on low, gradually add oat mixture, beating until combined. Fold in chocolate chips, raisins, and remaining 3 cups oats.

STEP 3
In batches, drop dough in 2-tablespoonful mounds onto a parchment-lined baking sheet, 2 inches apart. Bake until cookies are golden brown at edges, 15 to 18 minutes. Let cool on sheet on a wire rack 2 minutes, then transfer to rack and let cool completely.

I make almost this exact recipe and I found I can use only 1/2 stick of butter if I add 1 cup of unsweetened applesauce in place of the other 1 1/2 sticks.

i always reduced amount of sugars to 1/3 cup each when i made this cookies and it was the best oatmeal cookie i ever have.thx sarah😉

I made these today. I used half the recipe for just my husband and myself. These cookies are really good! I decreased the butter to five tablespoons and added three tablespoons of chucky peanut butter. I also substituted cranberries for the chocolate chips and Brown Sugar Truvia for the total of the white and regular brown sugars. I also added a half (1/2) cup of chopped pecans. YUMMY! They are delicious...No wonder why I can't lose weight! Ha ha ha ..Kudos to you! Wonderful recipe. :-)

I made the cookies using 1/2 cup sugar. Was more than enough. Since I have acid reflux, I cannot use chocolate chip. I used roasted crushed walnuts. They were fabulous!

I just finished making these. I added peanut butter chips, walnuts and dried cranberry. They are delicious! I did add a bit more vanilla and cinnamon. They came out chewy and big. Just like I like them. I don't care for really flat cookies. This one goes in the recipe box!

I own a hand mixer but I always bake with just a spatula.. if your butters soft enough its really not that hard to cream.. only use electronics to whip stuff

I think mine was chocolate chip cookies too.. I placed each chip individually on each cookie so it pointed upwards. Then I'd take a small handful of dough, stuff it with A LOT of chocolate chips and I'd eat that myself.
