Dooku is so underrated.
I think they made tales of Jedi and made him such a badass in clone wars was to increase the popularity of the character and give him a backstory and some level.
But maul is more iconic, a person who doesn’t know Star Wars will see dooku and won’t know who he is but they will know who maul is.

Dooku takes skill, but otherwise accurate. He should definitely win under most circumstances. Dooku consistently took out Obi Wan even when Anakin was there to back him up... Maul consistently could not take out Obi Wan, failing to do so even with Savage for backup. Dooku is in a different league. Also can't imagine Dooku would've failed to take down Ahsoka in the Clone Wars finale...

Dooku would win with force powers as well as combining force powers with Saber dueling but in a pure Saber fight or a pure unarmed combat one he would crumble yeah.

*Unpopular Opinion:* By the time of Son of Dathomir, Maul had surpassed Dooku.
Maul was able to duel Mace Windu and Aayla at the same time. He also held his own against Palpatine, far better than the Jedi council members. Maul is also considered a better duelist than Dooku.

Maul was defeated by Obi-Wan when Obi-Wan was still a padawan! Meanwhile Dooku defeated Obi-Wan easily (twice) once when Obi-Wan was a full night, and the second time when he was a Jedi Master! If Maul couldn’t even defeat Obi-Wan as a padawan, how the hell is he supposed to be a match for Dooku in lightsaber combat? Also, Darth Maul while exceptionally skilled at his form 6 style still ultimately uses one of the weaker dueling forms. Dooku’s form 3 is specifically designed for lightsaber dueling, and he is the master of that form. And then there’s force powers. Dooku clearly has an edge here as he has full control of force lightning.
