You should also check with the manufacturer. For example, Wusthof (German knives) sharpen their knives at 14 degrees. I also have Finnish and Swedish knives that are sharpened to 11 degrees.

Wusthof says its knives are 14 degrees from the factory. You say to use the 20 degree side. Confused. Please confirm.

Are the 15 and 20 degree angles you are talking about the bevel angle or the edge angle, which is twice the bevel angle?

Thats a miyabi Japanese knife, almost always hand sharpened at 11 to 12 degrees. Make a magnetic holder for 12 degree.

it makes no sense! For kitchen knives always use 15. In kitchen you use knives for food, not for hard stuff. 15 cuts so much better. I use it for any knife I have with success.
