the problem is, how bad does it have to smell. what if there's barely any smell. it's hard for me to tell the difference because I haven't been cooking for too long.

As a Butcher, you will know when it’s off and won’t question it for a second, if you think there might be a chance it’s okay, then it most probably is.

Thanks for this nice quick answer. It's really common sense I think. But I took out a pork roast a few days ago from my freezer, still sealed. It took a day to defrost and I was not able to cook it when I had planned. So hoping it's still good. Thanks!

Thank you so much for mentioning the off gassing thing as that’s exactly what I have. One day expired chicken, had a smell when opened the package but the chicken itself smells totally fine and looks totally fine

how can you tell it's gone bad, when the meat sits in the freezer for months. how can you tell an off scent from a freezer scent?

I’ve been a meat cutter butcher for about 4 months now. So far I’ve learned all of pork primals and cuts. For me if the pork I interact with smells like sulfur/rotten eggs/ sour I pitch it. If you have a local market or butcher shop stop up to one ask ask for them to cut whatever you need fresh. If you’re getting ground meat. Ask them how old the shop trim they’re using is. Butcher shops or food markets that cut their own beef/pork will always taste fresher and have better flavor. Even Costco has cutters

So does that mean it’s good if I can’t smell anything?? Or is it the corona that fucked up my smell and it’s actually still bad? Man why hasn’t by taste or smell returned fully yet.

I had a steady problem buying packaged pork butts opening them and they just reek like rotten eggs it'll be two weeks before the sell-by date even. I've let them sit out to air out I print them off but I can't put them in the oven and not smell rotten eggs I just threw away a 12 pound pork shoulder because the thing smell like rotten eggs and it was 9 days before the sell-by date and now my whole house smells.

Useful, my meat has grayish tint to it im not eager to just eat it, the texture tip was new to me, appreciated.
People, throw your meat in freezer and not in refrigerator for weeks... I wish i froze it.

K so it's 2 days past it's expiration date and I don't have enough experience to know if this is regular "slimy feeling" or if it's bad. I really don't want to throw this batch away :(

If it smells bad it could also be because it’s grass fed…

My thing is the lamb I cooked wasn't slimy I put water at the bottom for the vegetables and some spots seem so slimy I cooked it for two hours like recommended on stove top and I'm just worried maybe there is alot of fat and thats why it was pink when I cooked it no oder but the slimniess after cooking making me nervous
