This is sooo much better than making concentrates. Baking soda in water can be a bacteria farm if left in water for multiple days. If you're using a concentrate, it might be sitting for months in your fridge.

Would there be a difference in water for difference brewing methods? I would think espresso water and filter water would not be interchangeable. What are your thoughts?
